It’s a rainy day. Brrr….
So when I got up this morning, I slipped into my big fuzzy bathrobe and headed downstairs. I stared at the pantry shelf and noticed the usual loaf of bread was missing. Bingo! Suddenly all I wanted was soft, still warm-from-the-oven bread.
This is THE simplest bread recipe ever.
I’m talking 5 ingredients (minus the topping).
And yes, there is yeast, but this focaccia bread only needs 30 minutes of rising time.
I should’ve doubled the recipe.
Savory Onion Focaccia
2 cups flour*
2 1/4 tsp active dry yeast
1/2 cup water (115 degrees F)
1 TB oil
3 Tb spices (I used: oregano, savory, thyme, and fresh garlic, but anything works!)
*If you want to use part whole wheat, I suggest using 1 cup all purpose, 1 cup whole wheat
Topping
1/4 cup chopped onion
2 cloves garlic, minced
1 TB olive oil
1/2 tsp salt ( I used garlic salt for the extra oomph!)
- Add your water to a medium bowl, and warm to 115 degrees F. Add yeast, and stir to dissolve. Let stand 10 min.
- Add the flour, oil, and spices.
- If your dough is too dry, add water 1 TB at a time until the dough comes together.
- Lightly flour a clean surface, then knead the dough for ~2 min. Oil a bowl. Add the dough. Turn to coat all sides.
- Let rise for 30 min.
- Roll the dough out on unfloured surface, and drizzle with oil. Sprinkle on salt, onion, and garlic.
- Bake at 450 F for 10-12 min.
If I told you how long it took me to chop this onion, you wouldn’t believe me. I was crying all over the place.
