Spiced Apple Millet
Sorry, but I won’t believe you if you say you don’t like to eat pie for breakfast. Nope. I firmly believe it’s impossible to dislike something so gooey and delicious in the mornings.
But sometimes you don’t always have a slice of pie waiting for you in the fridge. So, my friends, instead you turn to the breakfast grains. In pie form, of course.
Spiced Apple Millet ( aka Apple Pie Millet)
- 1/3 cup dry millet
- 1/2 a large apple (or 1 small one)
- 1 1/4 cup water
- 1/4 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- sweetener, if desired (agave, maple syrup, honey)
- Chop up your apple (skin is optional- I left it on). Rinse your millet (a sieve works well). Drain.
- Heat a few teaspoons or so of oil in a pot. When it’s hot, add the apple, vanilla, cinnamon, and nutmeg.
- Saute for a few minutes. Add the drained millet, and saute a few minutes more, until fragrant.
- Add the water, and bring heat to a boil over high temperature. When it boils, reduce heat to low and simmer 25 min.
- Drizzle with sweetener, if desired. Serve!
I love apples! Except we only buy them in the fall/winter months…

Recently I have this thing about eating my breakfast grains (oatmeal, millet, quinoa, etc…) in a cup. For some reason it seems… cozier than a big bowl. And more portable (the handle!)
