Pumpkin Breakfast Cereal

Pumpkin Pie Cereal (6)

The name gives it away.

I saw this recipe and knew right away I was going to make my own spin-off. What else am I going to do with an abundance of pumpkin?
(Besides make dozens of Pumpkin muffins)

When I first made this, I was afraid it would be soggy cereal mush. No fears! It’s thick, creamy, and not mushy at all!

Spiced Pumpkin Bfast Cereal

  • 1 1/4 cup almond milk (or sub any other type of milk)
  • 3/4 cup puffed cereal ( used Kashi 7-grain, but I bet you could use almost any type of cereal, either puffed or not puffed)
  • 1/3 cup canned/cooked pumpkin
  • 1 apple, peeled and chopped
  • 1/2 tsp vanilla extract
  • 1 tsp pumpkin pie spice (or  use homemade)
  • pinch of salt

Blend all ingredients together in a blender. Top with nuts, fruit, granola, more cereal, whatever you want!

If you prefer it thicker, you can stick in the fridge for at least 15 min.
It seriously tastes like pie filling. I know, I say that a lot, but I felt like I was eating crustless pumpkin pie.
In pudding form.

Okay, I think you get the point.
I can’t wait to try it with other fruits as well…
Imagine the possibilities! Mango? Orange? Banana?
